Rising atmospheric carbon dioxide and other climate-related changes can affect the nutrient levels of our food. This has the most significant impact on those already experiencing food insecurity or nutritional deficiencies. Carbon dioxide pollution has created an imbalance between air and soil, as reported by FoodUnfolded.
There is an increased amount of carbon gas in the air, but the levels of nitrogen, phosphorus, potassium, calcium, and other essential plant nutrients have not risen at the same rate. As a result, the plants are rich in carbon but deficient in micronutrients.
“Essentially, the chemistry essential for our nutrition—protein, vitamins, and minerals—is imbalanced,” said Lewis Ziska, associate professor of environmental health sciences at the Columbia Mailman School of Public Health.
Soil degradation and biodiversity loss can also affect the nutritional content of the foods we consume. Industrial agricultural processes can disrupt soil health, and soil acidification and pollution can also reduce the nutritional value of our food.
Losses in biodiversity, such as the extinction of crop species or pollinators, may decrease the variety of available food types. The World Health Organization reports that two billion people currently suffer from deficiencies in important micronutrients like Vitamin A, iron, and zinc.
In a 2018 study, it was discovered that increased carbon levels could lead to an additional 175 million people becoming zinc-deficient and an additional 122 million people experiencing protein deficiency in the near future. Matthew Smith, a research scientist in environmental health at Harvard’s T.H. Chan School of Public Health, described this as a significant burden on human health.
According to FoodUnfolded, the declining nutritional value of staple crops will have a greater impact on populations already experiencing malnutrition. Kristie Ebi, a professor of global health at the University of Washington in Seattle, emphasized the need for various solutions to address all aspects of the problem, including understanding the interactions between climate change, carbon dioxide, and soil changes concerning the nutrients in our food.
FoodUnfolded reports that regenerative agricultural practices could help restore soil health, reduce atmospheric carbon, and make Earth more resilient. Financial incentives prioritizing nutrient density over crop yields may encourage farmers to make positive changes.
