Human-generated carbon dioxide has caused an imbalance between air and soil. The air has more carbon gas and fewer nutrients like nitrogen, phosphorus, potassium, and calcium that plants need to grow.
The plant that results from this process has a high carbon content but a low content of essential micronutrients such as vitamins, minerals, and protein. This leads to an imbalance in the chemistry that we rely on for our nutrition.
Soil degradation and biodiversity loss can reduce food nutrition. Industrial agriculture harms soil, and pollution lowers food quality.
The World Health Organization reports that approximately two billion people lack essential micronutrients such as Vitamin A, iron, and zinc.
A study conducted in 2018 suggests that increased carbon levels could lead to an additional 175 million people experiencing zinc deficiency and 122 million people suffering from protein deficiency in the coming years.
